  • Brush to clean salsify under running water. Peel, rinse and slice them.
  • Cook until al-dente in water with a pinch of salt and a dash of lemon juice, for ca.20 minutes.
  • Cook vegetable-stock in 900ml water.
  • Fry shallots glazed in 1 tablespoon butter and 1 tablespoon oil.
  • Add rice onto the shallots and stir until the grains shine of the fat.
  • 'Gradually', add the hot broth to the rice.
  • Bring all to the boil and keep stirring. After about 18 minutes the rice is soft but still firm.
  • Add cilantro, parmesan cheese and some butter to the risotto and stir to mix. Season with salt and pepper.
  • Brush mushrooms clean and fry briefly on high heat in 1 tablespoon butter.
  • Medium pan-fry the hare fillets in a bit of butter, a few minutes each side. Season with salt and pepper.
  • Get the meat off the pan and keep it warm wrapping it in aluminum foil.
  • Pour beer out in the pan together with some game-stock and let it reduce until the sauce thickens.
  • Slice the hare loin and serve it, arranging it on top of the risotto along with the mushrooms and salsify.
  • Finish with a spoon of sauce.
